Gideon’s Bakehouse Copycat Peanut Butter Cookies

Gideon’s Bakehouse has become a staple of indulgent cookies in Disney Springs since it opened it’s doors. We’ve never met a Gideon’s cookie we didn’t like. But our favorite? Hands down the peanut butter! This recipe is inspired by Gideon’s and satisfies our sweet tooth until we’re able to get a bite of the real deal!

- 1 cup butter, melted
- 1 cup sugar
- 1 cup brown sugar
- 1 cup peanut butter
- 1 tbsp vanilla extract
- 1 tsp baking soda
- 2 eggs
- 1 & 2/3 cup cake flour
- 1 cup AP flour
- 3 cups peanut butter chips (separated into 1 cup and 2 cup portions)
- 2 cups honey roasted peanuts, chopped
- Flakey sea salt
Step by Step Instructions
Step 1
Preheat oven to 350F. Prepare baking sheet with parchment paper.
Step 2
Cream butter, sugar and brown sugar. Add peanut butter, mix. Add vanilla and eggs, mix. Add baking soda, salt, and flour (in increments), mix. Still in one cup of the peanut butter chips.
Step 3
Use an ice cream scoop to measure the cookie dough, drop onto baking sheet.
Step 4
In a separate bowl, combine the remaining peanut butter chips with the honey roasted peanuts. Carefully roll the dough into the toppings and press with hands to help stick.
Step 5
Bake in the oven for approximately 12 minutes. Allow to cool slightly. Press in additional topping once cool enough to safely handle. Top with flakey sea salt.
Step 6
Allow to finish cooling. Enjoy with milk or a peanut butter cold brew!
