When you’re cooking on the road, there are a few things that are really important. For us, it’s finding foods that are healthy, filling and nutritious but also quick, easy and low maintenance. This one checks all the boxes! We love making this Mediterranean salad, especially as a lunch for travel days.
Ingredients
Salad
- 2 bell peppers diced
- 1 English cucumber diced
- 1/4 cup red onion finely diced
- 1/2 cup kalamata olives diced
- 2 cans garbanzo beans drained and rinsed
- 5oz feta crumbles
Dressing
- 1/2 cup olive oil or avocado oil
- 1/4 cup white wine vinegar
- 1 tbsp freshly squeezed lemon juice
- 1 tbsp fresh parsley
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp pepper
Optional toppings
- hummus
- pita chips
- mint
Step by Step Instructions
Step 1
Combine all salad ingredients together in a large bowl.
Step 2
Combine all dressing ingredients in a jar with a lid or a salad dressing container. Shake well.
Step 3
Pour dressing over salad and mix well.
Step 4
Put each serving into a bowl. Top with hummus and pita chips. Alternatively, use pita chips to scoop salad like a dip.
Step 5
Store in the refrigerator in a sealed container for up to 3 days.
